Here's a closer look at Las Vegas's newest eateries, drinking spots, hotels, conference areas, private rooms, and other spaces available for events this spring. The new and renovated Las Vegas venues are available for corporate parties, weddings, fundraisers, outdoor functions, business dinners, team-building activities, conferences, meetings, and more.
Proper Eats Food Hall & Easy's Cocktail Lounge

Clique Hospitality opened the highly anticipated Proper Eats Food Hall on the promenade level of ARIA Resort and Casino in February 2023. The food hall spans 24,000 square feet with a design from Alessandro Munge of Toronto-based Studio Munge; culinary highlights include Wexler’s Deli, Seoul Bird, Temaki Bar, Eggheads, and Pizzaoki. For events, the food hall’s main bar can host as many as 300 people, while a full buyout can hold 900. For more upscale and intimate events, there’s the new Easy’s Cocktail Lounge (pictured). Hidden behind a donut shop, the speakeasy-style venue has plush velvet seating, a dedicated performance stage, cocktails from renowned mixologist Eric Hobbs, and event space for as many as 90 people. Overall, the 4,000-room ARIA Resort has 500,000 square feet of event space.

BrewDog Las Vegas

Multinational brewery and pub chain BrewDog opened its first west coast location in December 2022. The massive BrewDog Las Vegas spans 30,000 square feet above the Showcase Mall; it draws attention with a 4,000-square-foot LED cube and 30-foot illuminated sign, and boasts a standout rooftop bar with fire pits, lounge chairs, an elevated menu featuring ribeye and wagyu burgers, and 360-degree views of the Las Vegas Strip. Inside, a colorful taproom offers pub-style food and a range of seating areas, including the semi-private “beer school room;” the interior also offers games like pinball, shuffleboard, and board games. There are 96 taps of craft bar, including exclusive options from the on-site microbrewery along with a rotating lineup of American guest breweries. The space offers a dedicated events team and customizable food and drink packages.

The Lexi Las Vegas

The Artisan Hotel Boutique is currently undergoing a multimillion-dollar renovation to become The Lexi, the new flagship property for Elevations Hotels and Resorts. The 64-room hotel, slated to officially debut in spring 2023, bills itself as the first Las Vegas hotel to introduce “cannabis-friendly hospitality;” the entire fourth floor of the property will be designated as cannabis friendly, and each room will include an air-filtration system that uses advanced oxidation cell technology. The Lexi will be home to a new, 1,000-square-foot Cajun-inspired steakhouse concept from Hell’s Kitchen alum Jordan Savell, along with the newly redesigned, 580-square-foot Artisan Bar & Lounge, plus the 4,000-square-foot Lexi Pool area—one of Vegas’s only European-style pool experiences—and an adjacent 2,260-square-foot event center. The Lexi also has a new 2,500-square-foot grand lobby (pictured) that can be rented for live music and entertainment events. The non-gaming hotel is located a few minutes from the Strip, downtown Las Vegas, and the Las Vegas Arts District.

Flight Club

Dart-throwing bar Flight Club opened in November 2022 at the Grand Canal Shoppes inside the Venetian Resort Las Vegas. Described as a “social darts” venue, the activity space offers multi-player games set in 20 semi-private playing areas inspired by British pubs and fairgrounds—all equipped with dartboards that score automatically and can connect to any other board in the venue. There’s also an eye-catching carousel bar with 27 seats, along with a menu of food and bespoke cocktails. In addition to the playing areas, there are three dedicated event spaces: the Victorian Room, which seats 40 or holds 75 for receptions; the Vista, which seats 50 or holds 100 for receptions; and the Pavilion, which seats 40 and holds 80 for receptions. Flight Club can hold 600 people for full buyouts.

Ramsay’s Kitchen by Gordon Ramsay

Michelin-starred chef and TV personality Gordon Ramsey opened his sixth Las Vegas restaurant, Ramsay’s Kitchen, on Nov. 16, 2022. Inspired by his travels abroad, the new eatery at Harrah’s Las Vegas seats 244 guests in the main dining room, which has an attention-grabbing social point of glass-blown, copper-colored pendants. The dining room also features a theater kitchen, a seven-seat seafood counter, and a floor-to-ceiling custom wine display. There’s also a 3D art piece made of coasters that depict chef Ramsay. For events, a private dining room seats 12. The 2,600-room Harrah’s Las Vegas has a 25,000-square-foot conference level and is directly connected to the 550,000-square-foot Caesars Forum.

The Beverly Theater

The Beverly Theater opened in downtown Las Vegas on March 3, 2023. The new two-story venue spans 14,300 square feet. The space is part independent film house, part performance space, and part live music venue, with a terrace, a courtyard, and a 140-seat theater all available for private events. (In the theater, the seats are collapsible, and an acoustical wall can slide open for more space. There's also a 360-square-foot screen.) Philanthropist Beverly Rogers and the Rogers Foundation launched the concept and will operate the theater on a nonprofit basis; the space is hosting a series of community events that are free and open to the public with RSVP.

The Beast by Todd English

Celebrity chef Todd English opened The Beast, a 6,500-square-foot food hall inside entertainment venue AREA15, in 2021. And in January 2023, the venue debuted a new private dining room within the space (pictured). The sleek, moody room holds as many as 18 people and has its own full-service bar along with specialty menus and catering options. In total, AREA15 spans 200,000 square feet, with unique event spaces including the 155-capacity LIFTOFF Bar and Ride; a 25,000-square-foot outdoor event space; The Portal, a 6,500-square-foot event space configured with 360-degree projection mapping; and Sanctuary, a circular volcano-inspired space that holds 100 people for events.

The Punk Rock Museum

Las Vegas’s new Punk Rock Museum opened on March 10, 2023, in a 12,000-square-foot space between the Strip and downtown. The unique museum houses artifacts like handwritten lyrics and set lists, stage props, instruments, and other memorabilia; there’s also a “Jam Room” where visitors can play guitars and other instruments donated by punk legends, plus a bar from P Moss, a wedding chapel, a merch store, and a soon-to-open tattoo studio. In a fun option for music-loving groups, punk musicians will provide guided tours of the museum starting on April 1; the tours are limited to 20 people, and guides will include musicians of bands like The Offspring, The Vandals, Fishbone, and Suicidal Tendencies.

StripSteak

In January 2023, James Beard award-winning chef Michael Mina opened the buzzy StripSteak at Mandalay Bay—and it boasts one of the Strip’s largest private dining rooms, with space for up to 72 guests. The room can be configured in several ways to suit a variety of events and is accented with walnut coverings, gold drapery, and midcentury art pieces. Overall, StripSteak—which was designed by boutique Southern California firm Bishop Pass—boasts a warm desert palette and sleek midcentury furniture, along with eclectic artwork, half-circle sage green upholstered booths, and deep burgundy chairs. StripSteak is located on Mandalay Bay's restaurant row; overall, the resort and casino spans 120 acres and includes a 2.1-million-square-foot convention center, along with the Michelob ULTRA Arena and the Shark Reef Aquarium.

Ojos Locos Sports Cantina Y Casino

Ojos Locos Sports Cantina Y Casino made its public debut on Feb. 6, 2023. A collaboration between Las Vegas-based Fifth Street Gaming (FSG) and Dallas-based Ojos Locos Sports Cantina, the newly renovated gaming and entertainment destination represents the first U.S. hotel-casino dedicated to the Latino community. Replacing the Lucky Club Hotel & Casino in North Las Vegas, the reimagined, event-friendly resort features a 10,000-square-foot casino, plus a restaurant that can hold as many as 300 people. The interior now has a rustic feel, with whitewashed, reclaimed wood and corrugated tin roofs. There’s a 35-seat video poker bar, 200 new slot and gaming machines, and 90 TV screens throughout the property. The adjacent, newly rebranded Hotel Jefe has 90 rooms and suites.

Rouge Room

Looking for a place to bring a VIP? On March 17, 2023, Hospitality company Wish You Were Here Group and restaurateur Nick Mathers opened Rouge Room, a sophisticated European-inspired cocktail lounge located in the Red Rock Casino, Resort & Spa. Taking over the 5,345-square-foot event space formerly known as the Crimson, the upscale venue welcomes guests with floor-to-ceiling velvet curtains and an oversized gold door. Inside, there are intimate tufted booths and a grand piano, plus a French-inspired menu offering caviar, a seafood tower, and an extensive cocktail program. Later this spring, the property will debut Rouge Cabanas, an adult pool experience featuring eight cabanas, multiple lounge-style seating options, and a full bar. Overall, the Red Rock Casino has 800 guest rooms, a 25,000-square-foot spa, a movie theater, and 100,000 square feet of indoor and outdoor meeting spaces.
